Amanda’s Apple Spice Cake, the best cake you’ll ever eat

It starts here… adapt and go!

As you know, I don’t bake.

But I love cake. I love this cake.

Amanda my colleague does not make it nearly enough for me. I whined so much that she gave me the recipe so that I can make it myself. I won’t tell you how long I have had this recipe for… But I finally have made it. And it was delicious.

I’ll share it with you because I’m so kind.

Start here:

2 bigish apples or you can use tinned apples. They are just as good.
1 cup sugar or whatever other sweetener you want. I used 3 tbs of honey, could have used 4
1 egg or egg substitute (1 tbs ground flaxseed and 3 tbs of water)
1 tsp cinnamon
½ tsp nutmeg
½ tsp mixed spice – don’t leave this out, mixed spice makes it ziiing
100g butter or nuttelex or whatever dairy free spread you want to use or ¼ cup of oil
½ cup sultanas – I use more like 2/3 cup because I love sultana’s
½ cup chopped walnuts
1 ½ cups of flour – wholemeal flour works too. Because, it is flour isn’t it. Or I’m sure that gluten free flour would work fine too. I have not tried it. Let me know if it works okay

Peel, core and dice apples (you want it to make 2 cups worth), put in bowl and sprinkle with the sugar.
Melt butter and allow to cool
Beat egg and mix into the butter
Sift dry ingredients together and add the rest of the ingredients
Put into a lined cake or muffin tray
Bake at 180 degrees for 60 minutes, or until brown
When cooked, sprinkle with icing sugar

The more fruit the better in my view. So don’t skimp out. No one will like you for it!
